Kohlrabi & Green Apple Noodle Arugula Salad with Goat Cheese, Dried Cranberries & Walnuts with a Honey-Dijon Dressing

Kohlrabi is perfect in a crunchy and light salad with a sweet dressing.
1Kholrabi (peeled and then use a spiralizer )
1green apple (use a spiralizer )
1⁄4 ccrumbled goats cheese
1 Tred wine vinegar
1 TDijon mustard
3 Tolive oil
- Place all of the ingredients for the dressing in a bowl and whisk together. Taste and adjust to your preference.
- Place the arugula and kohlrabi and green apple noodles in a bowl and pour over desired amount of dressing.
- Top noodles with goat cheese, dried cranberries and walnuts. Enjoy!
