Greek Stuffed Peppers

Ingredients

Peppers
1 T
olive oil
200 g
feta cheese (Crumbled)
200 g
cherry tomatoes (Halved)
50 g
black olives (Pitted)

red onion (Small, thinly sliced)

Lemon Zest
1 clv
garlic (Crushed)

basil

Instructions

Heat the oven to 200 degrees Celcius
Halve each pepper lengthways and discard the seeds and membrane.
Brush pepper with a little oil and place on baking tray
Combine feta, tomatoes, olives, onion, lemon zest, garlic and half the basil and use to fill each pepper
Drizzle with the remaining oil and bake for about 25 minutes or until the peppers are tender.
Garnish with basil.
