French Bean & Chorizo Soup

Description

The perfect soup for summertime!

Ingredients

500 g
french beans
125 g
Chorizo
1 l
Vegetable stock
1 t
Mixed Herbs
 
salt and pepper (to taste )
400 g
Potaoes

Instructions

 

Roughly chop the French Beans (top and tail them if not already done), the peel the potatoes and cut them into rough 4cm / 2½in cubes.

Add hot stock, the beans and potatoes to a pan, bring to the boil then simmer for 25 minutes. Mix the soup every ten minutes or so.

Turn the heat off and keep the chorizo and the fat from it in the frying pan. While the soup is cooking, chop the chorizo into bite sized chunks. Add them to a frying pan and cook on a medium to low heat for 12 minutes turning frequently.

When the soup has finished cooking liquidise it for a minute. Pour back into the pan and add the chorizo and all the fat that has come from it. Add the herbs, then taste the soup and season with salt and pepper to taste. Re- heat and serve with chunky French bread and a parsley garnish if available
