Description

Flat beans with tomatoes

Ingredients

olive oil
1
Small onion (roughly chopped)
2 t
ground cumin
400 g
tomatoes (roughly chopped)
1⁄4 T
tomato puree
1⁄4 T
brown sugar
1⁄2
lemon (squeezed)
250 g
beans (cut into strips)
2
sprigs of mint
2 clv
garlic

Instructions

Heat the olive oil in a heavy pan.

Saute the onion and garlic till golden and soft.

Add cumin, tomatoes, salt and pepper. Stir for 5 mins to coat in oil.

All 50ml water, tomato puree, sugar, lemon juice.

Cover and cook on a medium heat for 15 mins.

Stir and press down from time to time to help the tomato disintegrate.

Stir in the beans, cook for a further 10 mons. Adding more water if it starts to dry out.

Stir in some olive oil, the mint and check seasoning. Serve.

Notes

NOTES : Can be served hot as a side dish or cold as a salad.
