Description

Wild garlic pesto

Ingredients

  • 50g wild garlic
  • 25g shallots, roughly chopped
  • 25g walnuts or pine nuts
  • 100ml olive oil
  • 25g parmesan, grated

Instructions

  1. Sort through the wild garlic leaves and discard any tough stalks. Put all the ingredients, except the cheese, in a blender and blend till a smooth paste.
  2. Add the cheese. Taste and adjust the seasoning with salt and pepper.
  3. If storing, spoon into jars, press down leaving a gap at the top of the jar to add more olive oil. This will stop the pesto from oxidising. Store in the fridge.
