Squash Peel Crisps

A brilliant zero-waste idea from plant-based chef Zoe Marks (@nomadicgreenchef)

This work best with peel that is not too tough, such as on a butternut or delica squash. To save energy cook in the oven the same time as whatever else you’re cooking.


  • Peel of 2 medium squash (try to peel in long strips)
  • 2 teaspoons of olive oil
  • Salt and pepper
  • Favourite seasoning such as paprika or curry powder (optional)


  1. Pre-heat the oven to 200C
  2. Make sure the peel is completely dry before you use it. Place it in a bowl with the olive oil, salt and pepper and optional seasonings of your choice. Gently mix well with your hands so that all the peel is evenly coated.
  3. Lay the peel flat on a greased baking tray. You may need two trays.
  4. Bake in the oven for 8 minutes. Carefully turn the peel over and bake for another 4 minutes or until crispy
  5. Crips are best enjoyed straight away!
