Spicy Courgettes and Tomatoes Indian Style

Indian style courgette dish


  • 500 courgettes quartered lengthways, seeds removed and diced
  • 1 onion, peeled, halved and finely sliced
  • 250g tomatoes, skinned and diced
  • 1 teaspoon cumin seeds
  • ¼ teaspoon cayenne pepper or more to taste
  • 1 bunch of coriander, stems removed and chopped
  • 1 tablespoon lemon juice


Heat some oil in a pan

Add cumin seeds

When they pop, turn the heat down add the onion and saute for 10 mins, don't let it brown

Add the tomatoes, cover with a lid and cook for a further 10 mins till the tomato is soft

Add the courgettes, cayenne and some salt, cover with the lid again and cook for 10 mins till the courgette is cooked but not soft

Stir in the chopped corriander and lemon juice, check seasoning and serve immediately
