Rhubarb and Lentil Curry

A delicious veg curry with an unsuspecting addition - rhubarb!


  • 1 onion
  • 3 cloves garlic, crushed
  • 3 rhubarb stalks. Add more if smaller in size
  • 1 aubergine
  • 2 teaspoon garam masala, or mix together 1 tsp ground coriander, 1 tps cumin and 2 tsp paprika
  • ½ teaspoon tumeric
  • 450ml vegetable stock
  • 250g lentils
  • 1 lime
  • 250ml yoghurt
  • 250g rice


  1. Fry the onion and garlic until the onion is soft
  2. Add the garam masala and turmeric and coat the onions
  3. Add in the rhubarb, aubergine, lentils and veg stock
  4. Simmer for 10 to 15 minutes until the veg is just soft and lentils are cooked through. Add more veg stock if required.
  5. Grate the zest of one lime into the yogurt and mix well
  6. Squeeze the juice of one-half of the lime into the lentils and add salt and pepper to taste. Serve with a side of rice and zested yogurt.
