Fruit & Veg Curried Slaw

Prep time:
10 minutes

Crunchy texture and sweet flavours make this an excellent cabbage side dish.

  • 150g celariac, peeled and finely sliced
  • 200g cabbage, cut in half and shredded
  • 100g pear, finely sliced
  • 1 teaspoon curry powder
  • 3 tablespoon yoghurt or mayo
  • 2 handfuls mixed nuts
  • 2 handfuls dried fruits
  • juice from 1/2 a lime
  • salt and pepper to taste

  1. Peel any skin and knobs from the celeriac. Cut the celeriac and cabbage in half, and slice as finely as you can. A mandoline is the best equipment for this, or a very sharp knife and patient slicing skills. You can also use a peeler to shave the celeriac or grater it.
  2. Thinly slice the pear into pieces to match the celeriac and cabbage. Add all fruit and veg slices to a large bowl.
  3. In a small bowl, mix the curry powder with the yoghurt or mayo. Toss in with the sliced veg and coat well.
  4. Add dried fruits and nuts to your liking. Mix everthing together well
  5. Season with juice from half a juice, and salt and pepper to taste
