Fresh Coriander Sauce

Description

A fresh and colourful sauce to add bright flavours to any meal. No cooking required.

Ingredients

1 bunch coriander

2 garlic cloves

1 jalapeno, or 1/2 hot green chili

1/4 tsp salt

80ml olive oil

3 tbsp orange juice

Instructions

  1. Rinse, dry, then coarsely chop coriander leaves
  2. Cut garlic in half. Core and seed pepper, then chop.
  3. Place all in a blender or food processor with salt. Whirl until finely chopped. While motor is running, slowly add oil, then orange juice. Scrape down sides as necessary.
  4. Drizzle over meat, fish or veggies or pour into a small bowl and serve as a dip. Sauce will keep well, covered in the refrigerator, overnight. Sauce tastes great served chilled or at room temperature.
