Crunchy Apple and Golden Beetroot Slaw

Crunchy slaw with apple and golden beetroot


  • half a red cabbage, thinly sliced
  • 2 golden beetroots, peeled and julienned
  • 2 small eating apples, such as Cox, thinly sliced
  • 2 large handfulls of raisins
  • 2 large handfulls of walnuts, chopped

For the dressing:

  • juice of one lemon
  • 1 teaspoon mustard
  • 2 teaspoon red wine vinegar
  • 2 teaspoon agave nectar or honey
  • 2 tablespoon olive oil


Combine the dressing ingredients together and mix well, season to taste. Toss the salad ingredients together in a large serving bowl. Add the dressing and mix with your hands to combine.
