Crown Prince Squash and Mushroom Creme Fraiche


This is a delicious dish which can be served alongside a leafy salad. Can be eaten warm or cold.


  • 1 crown prince squash, scored and drizzled with olive oil
  • 1 clove garlic, finely chopped
  • 250g chestnut mushrooms, chopped
  • 3 tablespoon creme fraiche


  1. Score and place squash on a baking tray, leave to cook for 40 mins
  2. Prepare mushrooms and then fry until golden brown
  3. Add in garlic into the pan and fry for a few mins
  4. Reduce the heat and add in the creme fraiche
  5. Remove the squash and dice into cubes
  6. Lay squash over the top of the mushrooms and serve
