Carrots in a Blanket

A healthier alternative to traditional pigs in a blanket.


1 package of puff pasty

12 carrots, cut to small batons about 5cm long to make about 24 batons

2 tbsp olive oil

salt and pepper to taste

1 handful fresh dill, chopped


  1. Take the puff pastry out of the fridge and let it come to room temperature. Pre-heat the oven to 430 F / 220 C and prepare a baking try with parchment paper
  2. Boil the carrots until tender. Drain and let them cool
  3. Next, heat the olive oil in a pan, and pan-fry the carrots until golden brown. Add salt and pepper to taste and transfer the carrots to a bowl
  4. Mix the carrots with the chopped fresh dill
  5. Roll out the puff pastry on a floured surface. Cut out 24 squares and roll a carrot into every square, giving the pastry a little pinch to seal the ends together. Put the pastries seal side down on the baking tray. Bake for 15 minutes, until the pastry is puffed and golden
