Broccoli Parmesan Fritters

Broccoli Parmesan Fritters


  • 350g broccoli, split into small florets
  • 2 eggs
  • 125g plain flour
  • 2 garlic cloves, crushed
  • 75g parmesan cheese, grated
  • 1 L olive oil for frying


Steam the broccoli till just soft, cool and lightly mash.

Beat the eggs in a large bowl, add the flour, garlic and parmesan, salt and pepper. Parmesan is salty so go lightly with the salt.

Stir in the broccoli and adjust seasoning.

Heat the oil in a large frying pan.

Spoon 2 tablespoon mounds of the mix onto the pan and flatten with the back of the spoon, leaving a space between each fritter. Fry for 2 to 3 mins till golden brown, turn over and fry for another 1 to 2 mins till golden on the other side.

Drain on kitchen paper and serve warm.
